Ingredients:
| Ricotta | 1/4 cup | |
| Mozzarella | 3/4 cup, part skim, shredded | |
| Frozen spinach | 1/2 cup, thawed, chopped | |
| Garlic powder | 1 tsp | |
| Green chilli | 1 minced or to taste | |
| Italian seasoning | 1/4 tsp | |
| Basil leaves | 2 julienned | |
| Black pepper, Salt | to taste | |
| Olive oil | for cooking and spreading on the bread | |
| 4 slices of bread | any kind of your choice, I use whole wheat | |
1. Heat a non-stick skillet or grill pan over medium heat. Mix the first 8 ingredients in a medium bowl, set aside.
2. Brush the outside of each slice of bread with oil, spread the ricotta mix on the inside, season with salt and pepper and finally top the other slice of bread.
3. Place sandwich in the pan, cover with lid and cook until sandwich is golden brown on bottom, about 2 minutes. Then lift sandwich out of skillet and drizzle with some olive oil into skillet and evenly on the sandwich. Carefully flip sandwich to the other side, cover with lid and continue to cook for 2 min until bottom side is golden brown and cheese is melted through. Serve immediately with some marinara. ENJOY!

You have successfully got me into this. I never knew a simple sandwich can be turned into an addiction. Made a grill sandwich with chilli paste & cheese filling. Wow as I said its just tastes so great.

This was amazing. I didnt have ricotta so I used cottage cheese and added a little parmisan too. I also used fresh spinich. Made tomato soup for a side. We loved it thank you.
