| All purpose flour | 1 cup | |
| Cocoa powder | 3 tbsp | |
| Sugar | 1/2 cup | |
| Baking powder | 1 tsp | |
| Coffee powder | 1 tsp | |
| Salt | 1/4 tsp | |
| Dark Chocolate chips | 1/2 cup | |
| Egg | 1, whisked lightly see notes | |
| Vanilla | 1/2 tsp | |
| Buttermilk | 1/2 cup see notes | |
| Oil | 1/4 cup + 2 tbsp (I use olive oil) | |
1. Preheat oven to 325ºF
2. In a medium bowl sift the flour, coco, baking powder and salt. Stir in the sugar and coffee, mix. Add in the buttermilk, oil and egg, whisk till smooth and no dry flour is left, stir in the chocolate chips.
3. Pour in greased pans and bake in the center rack for 35-40 min or till cake tester comes out clean. Let cool it down, slice and serve. ENJOY!
Notes:
1. An easy and quick way to make buttermilk at home is just add 1/2 tsp white vinegar/ lemon juice in 1/2 cup cold milk, let stand for 5 min, use per the recipe.
2. You can substitute egg with 2 tbsp plain fresh yogurt.

@ Anon ~ I just use boiled cold milk straight from the refrigerator and yes, you can use the same amount of lemon juice for the buttermilk. Hope that helps.
