Grilled caprese cheese sandwich!

Wish all my readers and fans a very Happy New Year 2013.
If you have followed my endless rants about my love for paneer and nutella this recipe is about the one other thing I totally can eat in any which way - the humble bread. This sandwich is the favorite form in which I like it too. Two slices from my favorite Italian bread or French baguette smothered with extra virgin olive oil with a slice of fresh mozzarella, tomato and basil sandwiched within, made slightly crisp on a pan  - just enough for the mozzarella to melt and start oozing. Yum is all I can say.
I have another similar recipe here which is done more in a panini style. This is done like more of a sandwich.
Ingredients: serves 1
French /Italian bread     2 slices
Tomato2 - 4 slices
Basil 2 leaves, julienned
Tomato pesto1 tbsp or as needed
Olive oil/butter1 tbsp + 1 tsp
Fresh mozzarella slices 2 - 1/4 inch thick or part skim grated mozzarella 2-3 tbsp
Salt, pepperto taste

Method:

1. Heat a non-stick skillet or grill pan over medium heat.
2. Brush the outside of each slice of bread with oil, spread the pesto on the inside, place the mozzarella on the pesto on one slice of bread, top with the tomato, basil, season with salt and pepper and finally top the other slice of bread pesto side in.
3. Place sandwich in the pan, cover with lid and cook until sandwich is golden brown on bottom, about 2 minutes. Then lift sandwich out of skillet and drizzle with some olive oil into skillet and evenly on the sandwich. Carefully flip sandwich to opposite side, cover with lid and continue to cook for 2 min until bottom side is golden brown and cheese is melted through. Serve immediately. ENJOY!
