Baked Red Velvet Donuts!

My kitchen drawer where I keep my bake ware is almost always in a disarray. All the different shapes and sizes of pans and trays oftentimes do not play very well together when it comes to staying organized. Then to top that I just cannot resist buying a baking pan or tray that I come across and it catches my attention. The donut tray I used for this recipe was another such thing that I had to have when I saw it the other day at the store. It was a Wilton brand pan and this recipe was in fact right on the packaging itself. They make the perfect shaped donuts and whats better is that you can actually eat a few since they are baked and not deep fried. To kick it up another notch, if the donuts are the red velvet kind, what's not to like, after all who doesn't like red velvet cake. These came out really nice and soft and velvety and then with that cream cheese glaze on top, you just go 'yummm'. They are perfect  treat for the upcoming Valentine's day too.
Ingredients: makes 10-12 medium-sized donuts
All purpose flour    1 cup
Baking powder1/2 tsp
Baking soda1/2 tsp
Salt1/4 tsp
Unsweetened cocoa powder2 tbsp
Sugar 1/3 cup + 2 tbsp
Egg1 large, lightly beaten
Milk 1/3 cup + 2 tbsp
Oil 3 tbsp (I use olive)
Vanilla extract1 tsp
Distilled white vinegar1 tsp
Red food color 1 1/2 tsp (see notes)
For the cream cheese glaze -
Whipped cream cheese1/4 cup at room temperature
Vanilla extract1 tsp
Powdered sugar1/2 cup
Milk2 tbsp, or more if needed
Method:
Preheat oven to 425ºF.
1. In a large bowl, combine flour, cocoa, sugar, salt and baking powder, baking soda and mix with a spoon. Add in buttermilk and egg, vanilla and vinegar mix to combine. Stir in the oil. Mix.
2. Stir in red food coloring. Spoon into each greased donut mold/pan about 3/4 full. Bake for 7-10 minutes, then let cool for 10 minutes before removing.
3. In a bowl, whisk cream cheese vigorously until smooth. Add in sugar, vanilla and milk one tbsp at a time, whisking constantly till you get your desired consistency. Either dip donuts or frost/glaze them with a spoon, then cover in sprinkles or chocolate, if desired. ENJOY!
Notes:
1.The coloring will depend on the type and brand of color you use, so try to up or down the amount per your choice.

Great recipe and the photos look divine. I want to give these a try for my boys...I love that they are baked and not fried (I'm sure I'll steal a few for myself too! I know what you mean about seeing a new pan and HAVING to have it ;-)

Red Velvet donuts!!! What a positively wonderful idea... why didnt anyone think of it earlier??? Why didnt I hear of this before??? Ok, i will calm down and first tell you - you have changed my life with this recipe! hahaha... i love red velvet cakes and cupcakes. Never thought of a donut! Amazing...
