15 Minute Donuts!

What's not to like about fried dough. These are delicious little treats, soft spongy fried dough balls ready in under 15 minutes to feed your sweet tooth instantly when you so desire. Hot out of the fryer, as you hold one between your fingers, you feel the crispy outer shell but you can almost feel the soft spongy insides ready to be devoured. You blow on them a little (yes its okay to blow on your food in private) till they cool down just enough and then chomp away (yes you can close your eyes too).
Isn't it a delightfully scary thought that now there's nothing standing between you and a bowl of hot fresh donuts?!
Ingredients: makes about 16-20 donuts
All-purpose flour    1 1/4 cup
Sugar3 tbsp
Ricotta cheese8 ounces
Eggs1
Buttermilk/milk1/4 cup + 2 tbsp
Salt1/4 tsp
Vanilla extract1/4 tsp
Baking powder2 tsp
Canola/vegetable oil for frying, about 2 cups
Granulated sugar, cinnamon sugar or powdered sugar for coating
Method:
1. In a medium mixing bowl, stir together the egg, sugar, ricotta, buttermilk, salt, and vanilla extract. Add 
the flour and baking powder, and mix until just combined and no dry flour is left.
2. Heat oil in a deep pot on medium heat. Drop a tablespoon of batter into the oil and cook for about 3 minutes on one side and 2 minutes on the other side.
3. Place the balls into the oil 4-5 at a time. Do not make the doughnuts too big as the outside will brown too quickly and they won’t cook through. Don’t overcrowd the pot - you will probably need to fry the doughnuts in batches of four.When the doughnuts are cooked, scoop them out and allow them to drain on paper towels. Repeat with remaining batter. Roll them in sugar.These are best enjoyed the day they are made.ENJOY!

Wonderful donuts. Take me back to my visit to Canada and to Tim Horton. They serve a packet of donut balls of different flavour but I like the one with icing sugar, just like what you have posted here.
