Ingredients:
| Corn kernels | 2 cups (from about 3-4 ears) | |
| Green bell pepper | 1 small chopped | |
Ginger
| 1/2" grated | |
Green chilli
| 1-2 chopped fine | |
| Curry leaves | few (optional) | |
| Turmeric | | 1/8 tsp |
| Cumin seeds | 1/4 tsp | |
| Oil | 1 tbsp | |
Avocado
| | 1 firm ripe cubed |
Lemon/lime juice
| 1-2 tsp or to taste | |
| Roasted crushed peanuts | 1/4 cup | |
| Cilantro | | 1/4 cup chopped |
1. In a medium non stick pan heat the oil on medium heat. Add in the cumin, let it splutter. Add in the ginger, chilli and turmeric, saute for 30 sec.
2. Add in the bell pepper and cook for 1-2 min, followed by corn. Cook till tender, stirring gently, for about 4-6 min. Add in the salt, pepper, cilantro and lemon juice. Check the seasoning. Take off the heat.
3. Take it out on a platter, and add in the avocados and peanuts on top, give a mix. Sit back and ENJOY!

A healthy and yummy salad to snack on...Loved the used of avacado which gives it a creamy texture to it...
Puja the salad looks so colorful and inviting. I find it very difficult to remove the corn from the cobs and resort to using frozen ones. I make a different salad with this. yours looks refreshing. Got to try it next time.
