Yes I know, you have baked a cookie before or atleast had one. But if you haven't held one of these in your hands, you don't know what I am talking about. They say you taste food with your eyes first and these cookies are a definite treat to the eyes. When hubs picked one of these up, he turned it around a couple of times, gave it a good look and went "hmm... they look like lace", and I hadn't told him what they were named. I just smiled "they do, don't they?". They are not all about looks either. They are addictive and I am talking like potato chip addictive. You just cannot stop at one. When you bite into it you wonder how it is so thin and crispy yet manages to be delightfully chewy at the same time... and yes absolute fun to make too.
| Quick oatmeal | 1 cup | |
| All purpose flour | | 1/4 cup |
Salt | 1/2 tsp | |
Baking powder | 1 1/2 tsp | |
| Sugar | 1 cup | |
| Unsalted butter | | 1/2 cup softened at room temp |
| Egg | 1 | |
| Egg yolk | 1 | |
| Vanilla extract | 1 tsp | |
1. Preheat the oven to 325ºF and line a large baking/cookie sheet with parchment paper.
2. Cream butter and sugar for a minute. Add egg, yolk and vanilla and beat again till blended.
3. Add in the dry ingredients and mix until just combined. The batter will be slightly loose. Pour 1 teaspoon of the batter at a time onto the baking sheet at least 2 inches apart from each other and bake till the edges turn golden brown, about 7 - 11 minutes. Do not over-bake as they will harden and burn. Mine were done in 4 batches.
4. Remove the sheet from the oven and peel the cookies carefully, it will harden very quick. Serve, when comes to room temperatue, keep the leftover in a ziploc bag or airtight container. ENJOY!

I recently made these and filled them with a thin layer of chocolate for a version of Pepperidge Farm's Brussel's Cookies and they were fabulous! The lacy candy-like texture of these is so unusual---and your photos are great!

Thanks for the recipe, they turned out great. I only made 1/4 of the recipe to try them out for the first time. Using 1/2 tablespoon of batter per cookie made twelve 3-inch cookies. My batter was very thick (not "loose" as expected) but they thinned out perfectly in the oven. Thanks again.
