Caprese Pizza Dip!


Caprese salad is always my fallback when I don't feel like the regular lettuce and dressing. Mozzarella and Tomatoes are definitely a match made in food heaven - a totally classic combo and Mozzarella being such a versatile cheese you are often tempted to try variations with it. So a caprese dip sounded like a fabulous idea and I was (very) tempted to try it. I was not disappointed. It has the unmistakable flavor of fresh tomatoes with mozzarella and being warm and melty, it definitely has the essence of your simple caprese pizza. The fact that all these fabulous ingredients take the shape of a dip makes this dish extra fun to eat as you scoop it out with your favorite chip or toasted bread.
Ingredients: serves 4-6



Grape tomatoes    1 pint/2 cups halved
Olive oil 
1 tbsp + 2 tsp
Garlic
     2 cloves, minced
Cream cheese
     1 (8 ounces) block, softened at room temp
Mozzarella cheese    10 ounces shredded
Parmesan cheese

1/4 cup grated + 2 tbsp
Basil leaves
1/4 cup chopped roughly
Salt and pepper
to taste
Dried oregano      a pinch



Method:
1. Preheat oven to 425ºF. Line a baking/cookie sheet with aluminum foil. Place tomato halves on top. Sprinkle with 2 tsp olive oil and salt, then bake for 12-17 minutes. Take out of the oven and set aside.
2. While tomatoes are roasting, mix softened cream cheese with mozzarella, 1/4 cup parmesan. Stir in fresh basil, garlic, oregano, salt and pepper, mixing well to combine.
3. Place the tomatoes at the bottom of a baking dish, top it with the cheese mixture. Sprinkle with remaining parmesan, sprinkle 1 tbsp oil on top. Bake for 20-22 minutes, or until top is golden and bubbly. Serve immediately with crackers, chips or toasted crusty bread.

Looks so yummy! Want to make it for the Oscars tonight. Is it possible to assemble the dip a few hours beforehand and refrigerate it for a few hours until it's time to eat?

@ Anon~ I think you can do that.Just assemble the dip couple of hours before, keep refrigerated and then bake. Enjoy!
