Ingredients: serves 4-6
| Angel hair pasta/linguine/soba noodles | 12 oz | |
| Oil | | 5 tbsp ( I use canola) |
Garlic- Ginger | 1 tbsp, minced | |
Red chilli flakes | 1 1/2 tbsp (or to taste) | |
| Rice wine vinegar/balsamic | 1 tsp | |
| Brown or plain sugar | | 1-2 tbsp |
| Soy sauce | 2-4 tbsp | |
| For Garnish: | ||
| Carrot | 2 medium peeled and shredded | |
| Green onions | 3-4 choped | |
Peanuts | dry roasted and crushed 1/4 cup | |
| Basil leaves | 10-12 julienned | |
| Cilantro/Mint leaves | 1 tbsp (optional) | |
| Lime wedges | few | |
1. Cook the pasta aldente as per package direction. Drain and set aside in a large glass bowl.
2. In a small saucepan mix in the oil, garlic, ginger and chilli flakes. Simmer on medium-low heat for 5-7 minutes. Take it off the heat and cool down to room temperature. Strain the oil.
3. In the oil, add in the soy sauce, vinegar, brown sugar and whisk till everything combines. Add the oil mix to the pasta bowl and mix/ toss till all pasta is coated with the oil. Check for seasoning.
4. You can serve it either right-away with all the garnishes above of your choice or it can be refrigerated for 2-4 hours too. ENJOY!
