ow many times have you picked up a donut and set it down? Did I touch a nerve there? If I did, then read-on. I don't claim these to be the healthiest things around but they are perfect when you have a serious craving for those fried beauties. You get the same donut taste without all the frying. Being smaller they also give you portion control, be cautioned though that you will be tempted to pick up a few. These are delicious little treats, baked scrummy soft fluffy doughnut muffins coated with cinnamon sugar and filled with Nutella, how can you argue with that! Hot out of the oven, you blow on them till they cool down just enough and then chomp away... yes you can close your eyes too when you eat, it adds to the pleasure. We shamelessly finished the batch and don't even have any regrets.
They are very quick and ridiculously easy to put together. They also make for a great breakfast muffin and your kids will just love them.
| For the muffins | ||
| All purpose flour | 1 3/4 cup | |
| Baking powder | 1 1/2 tsp | |
| Salt | 1/2 tsp | |
| Ground Cinnamon | 1/2 tsp | |
| Oil | 1/3 cup | |
| Sugar | 3/4 cup | |
| Egg | 1 | |
| Milk | 3/4 cup | |
| Vanilla extract | 1 tsp | |
| Nutella | as needed | |
| For the coating | ||
| Unsalted Butter | 3-4 tbsp | |
| Granulated Sugar | 1/3 cup | |
| Ground Cinnamon | 1 tsp | |
Method:
1. Preheat oven to 350ºF and grease a muffin tray.I have used the mini muffin pan.
2. Combine flour, baking powder, salt and cinnamon in a medium bowl.
3. Combine and mix oil, sugar, egg, vanilla and milk in a large bowl. Add dry ingredients and stir only to combine till no dry flour is left.
4. Place a tbsp of the mixture into each muffin hole. Add 1 tsp of the nutella into the center of each and then cover with about a tbsp of the batter or till 3/4 full. Bake at 350 degrees for 18-22 minutes. DO NOT over bake.
5. While muffins are baking, melt butter in a small bowl. In another small bowl, combine the sugar and cinnamon.

5. While muffins are baking, melt butter in a small bowl. In another small bowl, combine the sugar and cinnamon.
6. Shake muffins out of the muffin tin while the muffins are still warm.
7. Dip muffins in the melted butter and then into the sugar and cinnamon mixture. Place on a wire rack and allow to sit for 10-12 minutes.These are best eaten warm. ENJOY!

Notes:
1.Feel free to get creative and replace Nutella with your favorite jelly or jam.
2. Store the leftovers in an air tight container for a couple of days at room temperature or up to 4-5 days in a refrigerator. Stick them in the microwave for few seconds and they are as good as new again.

Are you using a regular muffin pan or a mini muffin pan when doing these? I have to try. My BF will think I am a goddess if they come out. :-)

These were delicious! Note that the list of ingredients calls for vanilla, however, it was not included in the recipe instructions. Don't forget to add it!

@ Anon ~ you have to dunk the whole muffin in the butter and sugar mixture.
I made these and took them to work...I don't think I've ever been this popular at work! Great recipe, so easy and fast!
i made them today and they are wonderful! i used half unbleached wheat cake flour and half all purpose and they were light and lovely.
