Easy-Cheesy Garlic Bread


here are four things right about this recipe - toasted bread, garlic, butter and of course can't go wrong with melted cheese. Those are reasons enough for me to snack on this delight every so often. The very first time that I made it though, the reason was a little different. Every time hubby would cross the frozen foods aisle in our local grocery store he would point to one of the freezers and say 'hey why don't we get that garlic bread, they are really easy to make and are a great snack'. I would always cast him off as 'you always like to buy this junk from the stores, I will make you these at home some day'. Not sure what went through his mind but poor guy never said anything. A few moons ago, that one day finally arrived and when I made these I was totally hooked myself. He said it was way better than the ones in the store and I am not the one to complain when I get a compliment like that. Yes we have passed that freezer several times since and he has never brought it up again. 


Ingredients:
Loaf of French Bread ........................... 1/2
Butter ............................................. 2 tbsp
Olive oil .......................................... 1 tbsp
Green chilli ...................................... 1, chopped fine
Salt and Pepper ................................. to taste
Garlic ............................................. 3-4 cloves, minced
Dried Oregano ................................... 1 tsp
Shredded Mozzarella/Cheddar cheese ...... 3/4 cup
Shredded Parmesan cheese ................... 2 tbsp
Garlic Powder .................................. 1/2 tsp
Method:
1. Preheat oven to 350ºF.
2. Melt butter and olive oil. Once melted, add in minced garlic and chopped green chilli.
3. Once mixed in add salt to taste and dried oregano.
4. Once the garlic is cooked and has light color, take it off the flame. Be careful not to burn it.
5. Slice your bread to desired thickness and brush generously with the garlic oil  mixture on it on one side.Top with mozzarella and parmesan cheese. Sprinkle with garlic powder.
6. Toast in the oven until golden, about 10-12 min or till brown and cheese is melted. Broil for 1-2 minutes for a crispier texture. 
7. Serve hot with some marinara to dip in.Enjoy!
Notes:
1.Feel free to use all olive oil and avoid butter.

I'm afraid I have to agree with your hubby,Puja when he says that your homemade ones taste helluva lot better than the store ones!I too believe the same and I just can't stand the putrid smell of stale margarine every time I heat up a store-bought one:( your version is absolutely bang on - and so so delicious!Lovely recipe dear!

Quick Query: Any bread I toast in an OTG (Toast / both sides Mode) comes out too crispy / cracker-like by the time the cheese topping melts. Any idea why?

@Melissa ~ Happy to hear you like the recipe and are planning to try it out. To answer your question, I just used the regular fresh green chillies that they carry in the Indian grocery. You should be able to use finely chopped jalapenos instead though.

@ Nalini ~ Thanks for your comment. I use a regular oven not a OTG but my I can think of a couple of things that might be helpful to watch. Use only the top coil of your oven, keep the bread closer to the coil and finally every oven is different so it is important to keep an eye and vary the time accordingly.
