Triple Chocolate Brownie Cookies!

ere's my dilemma. I am not a big cookie fan. But absolutely love chocolate. Don't even care much for chocolate cookies. There is about only one baked sweet goodie that I like and that is a good loaded rich and moist brownie. If you get my drift, you probably realize where the thought of these cookies originated. There is one other angle to it. My little princess. She likes cookies especially chocolate ones, but she gives me a hard time when I try to get her to eat brownies. She takes it as I am trying to get 'food' into her and immediately revolts. But she likes the taste of brownies... don't ask.
So long-story-short as you can see these cookies are a winner.... er... well yes before I forget, hubs liked them too :)

When you take a bite into these cookies you immediately sense the rich, moist, chewy yet a nice crust on the outside. While you enjoy the texture, the rich chocolate taste hits your palate and... then you won't care anymore what I write here anyway... you'll be somewhere else. So here goes.
Ingredients:  (makes 18-20 ) Recipe inspired from epicurious.com
All-purpose flour ............................... 1/4 cup
Baking powder ................................. 1/4 tsp
Salt .............................................. 1/8 tsp
Eggs ............................................. 2 large
Sugar ............................................ 2/3 cup
Coffee powder ................................ 1 tsp
Vanilla extract ................................. 1 tsp
Unsalted butter ................................ 2 tbsp
Bittersweet chocolate, chopped ............ 5 ounces
Coco powder ................................... 2 tbsp
Semi sweet/dark chocolate chips ........... 3/4 cup
Method
1. Preheat oven to 375ºF. Line two baking sheets with parchment paper.
2. In a small bowl sift together the flour, baking powder, cocoa powder and salt. Set aside.
3. In the bowl of an electric mixer, add the egg,sugar, coffee and vanilla and beat on high speed for 15 minutes, until thick.
4. While the eggs are whipping, place the butter in a double boiler or in microwave. Melt butter and both the chocolates. Remove the boiler top from over the water and stir the chocolate and butter until smooth.
5. Gently fold the chocolate mixture into the egg mixture until combined. Add the flour mixture to the batter and carefully fold it in. Fold in the chocolate chips. If the batter is  runny, add 1 -2 tsp of flour and let it rest covered until it thickens slightly, about 5 -10 minutes.
6. Drop 1 tbsp of batter on the prepared baking sheets 1" apart and bake until puffed and cracked, 8 to 9 minutes. Cool on a wire rack before removing from the baking sheets. ENJOY!

@ Archana ~ Thanks dear.Taking the picture is actually is pretty straightforward. You simply prop the center cookie up on say a tall glass and focus the camera on it. That's basically it, enjoy.
