Cherry Peach Cobbler


tores are abound with luscious and juicy fruits these days. Hey what do you know, its summer. It is especially the time for stone fruits like cherries, peaches, plums, apricots and the like. Although modern grocery stores carry them in all seasons, this time of the year they are at their best.
The other day I asked hubs to get some regular grocery stuff from the store on his way back from work. I usually make a grocery list on my iPhone and email it to him and he carries the phone in his hands around the store, yes he's cute. I call it my high tech grocery list. Anyway, so this other day besides the usual potatoes, bread, milk and other stuff that was on the list, he got me a box full of ripe plump red cherries. After eating a few right after washing them right out of the bag, the only thought in my mind was 'dessert'. I have made and blogged about Cherry Crumble before so I decided to make my other favorite, the cobbler.

The Crumble and Cobbler are very much alike. They both have a gooey fruity bottom. The main difference is in the crust where the crumble has a crispy, crumbly (as the name suggests) crust whereas the cobbler has more of a doughy crust.
As you take your spoon and eagerly push it into the crust, you feel the softness of the dough and when you dig that first spoon out, the gooey underneath surprises you with its texture and color. There's only one thing you can do then, you guessed it, eat it. The fabulous cake-like texture combined with the freshness and tart-sweetness of the fruit makes it simple irresistible and before you know you are scraping the bottom of that ramekin hoping there's more left in the kitchen.
So here's a recipe with a dash of summer for your sweet tooth.
Ingredients: serves 4
All-purpose flour ........................................ 1/2 cup
Unsalted butter ......................................... 4 tbsp
Sugar ..................................................... 1/2 cup leveled, + 1 tbsp 
Baking powder .......................................... 1/2 tsp
Salt ....................................................... a small pinch
Milk ....................................................... 1/2 cup at room temperature
Peaches .................................................. 2, peeled and sliced 
Cherries .................................................. 1 cup, pitted and halved
Orange juice ............................................. 2 tbsp
Orange zest .............................................. 1 tsp 
Cinnamon powder ....................................... 1/8 tsp
Method:
1. Preheat over at 375 d F
1. Melt butter in a microwave safe dish. Mix 1/2 cup of sugar, flour, baking powder and salt into another mixing bowl, add in milk. Mix well. Pour in melted butter and whisk it all well together.
2. Butter a baking dish or ramekins. Bring remaining 1 tbsp sugar, 4 tbsp water, peach slices cherries and orange juice to a boil over high heat, stirring constantly. Cook for 5-7 minutes on medium-low heat till liquid evaporates.
3. Remove from heat and sprinkle cinnamon powder and orange zest. Mix and let stand for 5 minutes. Pour in the baking dish (or ramekins). Pour the batter over it (do not stir).
4. Bake in the oven for 30 to 35 minutes or until golden brown. Serve cobbler warm with some frozen yogurt or ice-cream. ENJOY!

Oh these are lovely! Stone fruits are my favorites (and to be quite honest I'm not a huge fruit lover in general). Peaches are my #1, but paired with cherries they are even greater! These little cobblers are so cute! I also often will email my shopping list to my phone and use that as I walk around the store, haha. Too funny :)
