s a prologue let me start by an apology for going missing the last ten days. I realized this was very unlike me when quite a few of my fellow blogger friends reached out checking up on me making sure I was okay. A big thanks to all my friends for the concern, I am deeply touched and just want to let you know that I am fine. I just took some time for a quick vacation. In the future, will make sure to let my friends know when I plan on going MIA.I am back now.
I might have mentioned it once or twice or a thousand times - I am a CHOCOHOLIC~ loooooooooooove chocolates in any form. Dark chocolate being my favorite.
One of the best ways to satisfy the chocolate addiction is in the form of molten chocolate. Gooey, rich, dark, hot molten chocolate~ ahhhhhh!!! Molten chocolate cake makes me weak in my knees, makes me forget all my resolutions lol..and I think is every chocolate lover's delight, the warm ooey-gooey chocolaty goodness is just irresistible.. and when made with 70% dark chocolate with a dash of coffee it goes to the level where it turns soooooooooo decadent and sinful that no words can express ~ molten chocolate NIRVANA :D
Ingredients: (serves 4)
Dark chocolate ...................... 5 oz chopped
Butter ................................ 4 oz
Egg .................................... 1
Egg yolk .............................. 1
Milk ....................................1/4 cup, cold
Powdered Sugar ..................... 1/2 cup
Coffee powder ...................... 1/4 tsp
Baking soda .......................... 2 pinches
All-purpose Flour ................... 1/4 cup + 2 tbsp
1. In a double boiler or microwave melt the chocolate.
2. In a medium mixing bowl, beat egg, yolk and powdered sugar until light and fluffy.
3. Once chocolate is melted, remove pan from heat and add in the melted butter. Mix and let it cool down to room temperature.
4. Add chocolate/butter mixture into the eggs (make sure it is at room temperature otherwise you will end up with scrambled eggs). Add milk, all-purpose flour, coffee and soda and mix until well incorporated.
5. Grease bottom and sides of ramekins and pour in mixture about 3/4 way full.
6. Place ramekins on a baking tray and bake at 400ºF for 11 – 14 minutes or until the center
is still gooey but the edges have slightly firmed. Run a knife over the
edges and invert into serving dishes.

This is my weakness. I can eat it anytime, anywhere, it is just that I somehow cannot mix my chocolate with anything, neither fruit nor ice-cream. Just hot fudge is allowed :)

Can this be done in advance, and if so till what part? And also can it be doubled/ tripled? Have you tried?
@ Anon ~ this is one of those dishes that has to be served hot out of the oven. I have never tried it but guess you could make the mixture a little bit in advance. But then again that wouldn't save you much time so its best to make it at the time of serving. Again, have never tried but you should be able to double or triple the quantities as long you follow the recipe closely.
