Vegetable Seekh Kebab with Green Chutney


he word "Kebab" has always fascinated me. I don't know... just the sound of it is so sophisticated and exotic that whether you have ever even seen it or not, you want to try it when you hear it... and believe me you will love it when you do :) But sadly for me they have always been synonymous with meat based preparations and being a vegetarian I just never could have any. Lately I came to know about veggie kebabs. I was elated by the thought that I could now eat kebabs and tried to recreate these beauties and it was exactly as I though it would be... exotic, elegant and heavenly tasting. These are perfect appetizers for get-togethers and pot lucks. Super easy to make and your guests will definitely go WOW when you serve these. 
You may find several recipes for kebabs if you look around but in my opinion this is an easy and no-fuss version that you will want to make over and over. Also, traditionally they are made in a tandoor or deep fried but I just shallow fry or broil them in the oven so they are very healthy too... lots of veggies and very little oil. As everything that goes in it is already cooked so very little oil is needed.
If you are making a large batch of the kebabs say for a big gathering, you can also bake them on a baking sheet. Just spray the sheet with cooking oil and broil them on high in your oven for 5-6 minutes on each side.

Ingredients: makes about 7-8
Paneer ................................ 1 cup grated
Potato ................................ 2 medium about 3/4 cup boiled n  mashed
Green peas ........................... boiled  and mashed 1/2 cup
Corn ................................... 1/4 cup boiled and mashed
Carrot ................................ 1 grated fine
Cilantro leaves ...................... 1 tsp chopped
Amchur ............................... 1/2 tsp
Green chilli .......................... 1 finely chopped
Mint leaves .......................... few finely chopped (optional)
Red chilli powder .................. 1/2 tsp or to taste
Turmeric ............................. a pinch
Chat masala ......................... 1 1/2 tsp
Raisin-cashew ...................... 2 tsp chopped fine
Garam masala ....................... 1/2 tsp
Bread crumbs ....................... 1-2 tbsp
Oil for pan frying/Brushing


Method:
1. In a medium bowl add all the ingredients one by one. Mix and knead for 1-2 minutes till you get a firm texture so you are able to make a ball. If not add 1-2 tsp of  corn starch or all purpose flour.
2. Heat a little oil on a non stick pan.
3. Shape the veggie mixture into 3 inch ovals, slightly flatten them and place them on the hot oil.
4. Brown the kebabs on one side, then flip them over and brown on the other side.
5. Alternately,take a portion of the dough  on the stick ,brush them with oil and broil them in the oven on high, flipping once till desired color is achieved.
6.  Serve hot with mint chutney and onion and lemon wedges.


Chutney-
Ingredients:
Cilantro ........................... 1 cup packed
Mint leaves ....................... 1/4 cup
Garlic .............................. 2 cloves
Roasted Cumin powder ......... 1/4 tsp
Green chillies ..................... 2 small chopped
Yogurt ............................. 1/4 cup
Lemon juice ...................... 1-2 tsp or to taste
Salt ................................. to taste
Method:
1. Wash the cilantro and mint leaves. Drain well. Blend everything together in a blender until you get a smooth paste. Adjust the salt and lemon juice. Serve immediately with Kebabs. ENJOY!

Just one tip, I read this somewhere: if using the oven/ broiler, soak the bamboo skewers in cold water for 30 mins, this prevents them from splintering in the hot oven
