Orange Olive Oil Loaf Cake


ey again folks. So my story this time is as simple as... I just felt like baking. Baking something nice and flavorful and... citrusy. The only citrus flavor I felt like was oranges. But then I felt a real urge to include chocolate. On second thought though I decided against it... and I am glad I did. This loaf cake came out so perfect with such nice and clean yet with a burst of citrusy flavor that it could even be a mood lifter when you are feeling a little blue. On a more technical note, I do want to point out that with this bake I realized that the EVOO really does wonders to a fruity cake while being healthier than regular oil, and as you will realize from the recipe below, it is really really easy to put together.

Ingredients:
All Purpose Flour .......................... 1 cup
Corn Starch ................................ 1/4 cup
Baking Powder ............................ 2 tsp
Baking Soda ............................... 1/2 tsp
Salt ......................................... 1/4 tsp
Sugar ....................................... 1/2 cup
Yogurt ...................................... 1/4 cup
Orange Juice .............................. 3/4 cup, freshly squeezed
Egg .......................................... 1 at room temperature
Extra Virgin Olive Oil .................... 4 tbsp
Orange Zest ............................... 1 tbsp
Method:
1. In a mixing bowl, combine the dry ingredients.
2. Beat sugar and egg for 2 min in another bowl, beat until smooth. Add oil, yogurt and beat for another minute.
3. Fold into orange juice and zest. Add in the dry mix.
4. Grease a 5"x8" loaf pan with non-stick cooking spray. Pour batter into pan. Bake at 375ºF for 35 to 40 min or until a toothpick inserted near the center comes out clean. Keep an eye as every oven is different.
5. Cool for 15-20 minutes before removing from pan to wire rack. Allow to cool completely to room temperature. Dust with confectioners' sugar if you wish. Cut into slices and serve. ENJOY!


Notes:
1. If you would like to bake eggless, I believe you can replace the egg with 4 oz of plain applesauce. Do let me know how it works if you try it.

Nice recipe only just 4tbsp of olive oil and no butter.But i have a doubt why u used baking powder and baking soda when u used egg??

I tried this cake and it was super soft and delicious. Loved flavor and taste.BTW the cake puffed/raised well and when I cooled it down, it reduced a bit. Is this ok? plz do let me know. :-) Thanks for the recipe dear!!!

@ Uma ~ thanks for trying the recipe dear. Glad to hear you liked it but the cake should not reduce on cooling. There is a couple of things I can think of , the eggs should be at room temperature when you add it to the cake batter and avoid over mixing. Hope that helps :)
