y kid doesn't eat very well! The universal problem which has been troubling every parent since eternity (except the few lucky ones... touchwood :) is going on with me too. My little one is a picky eater and I mean REALLY picky. Since she was little tiny baby I had problem feeding her which used to be like 45 min to an hour in one sitting. She is almost four now but that still continues. The few things she likes are to eat are mushrooms, nutella, olives, paneer, pineapple and rotini pasta. She doesn't like sweets of any kind except chocolate and nutella (for that I don't blame her... she took after me after all :). She even eats the spicy mushroom curry without complaining. In fact she doesn't like being treated like a baby when it comes to food (or anything else). Believe it or not she does not like even the classic kids stuff like fries, nuggets and the like. Three going on thirteen if you know what I mean. Yup we have a drama queen in our house... lol. I keep on experimenting with the things she likes. Yesterday was no exception. I was thinking what to give her for dinner and I came up with this and bingo it was well liked by kiddo and papa alike :) And I got one more recipe to please the taste buds of my little princess and a perfect one pot meal for those lazy days.
Ingredients:
Mushroom 2 cups .............................. quarterd
Cooked Basmati rice .......................... 2 cups at room temp
Corn kernels .................................... 1/2 cup
Garlic ........................................... 4 fat cloves sliced thin
Whole garam masala .......................... 1 tsp (peppercorn 5-6, cinnamon 1" stick, green cardamom 2, cloves 1-2)
Cumin ........................................... 1 tsp
Asafoetida ..................................... a pinch
Turmeric ........................................ a pinch
Green chilli .................................... 1 slit or to taste
Salt .............................................. to taste
Ground Black pepper ......................... 1/4 tsp
Cilantro ......................................... 2 tbsp + for garnishing
Oil ............................................... 1 1/2 tbsp
Method:
1. In a non stick pan heat oil on medium heat and add the asafoetida, cumin, cloves, cinnamon, let them splutter. Add in the green chilli and garlic and cook for 30 sec.
2. Add in the mushroom with salt and turmeric and cook till light brown and all the water evaporates from the mushrooms. Add in the cilantro and corn and cook for 3-4 minutes.
3. Add the cooked rice, mix to combine everything garnish with cilantro and cook till rice gets heated thoroughly. Serve with some yogurt, raita or curry of your choice. Enjoy!

This is what I would call a gorgeous rice pilaf, Aipi. A true favorite of ours that I make often. Actually I wanted to make this delicious rice with the mushrooms and vegetables, but instead, we had a beautiful side of salad, and the plain rice. with the main dish.
Now, I wish I had made this, instead. It looks so yummy, all set for spring, with all the vibrant colors, and flavors. I smiled to myself about your little daughter. Loved reading your cute post!

Oh my God, Aipi, I can so relate to your story here! And my son is only 22 months now....he has almost stopped eating anything, even milk...but still his energy levels don't seem to drop and I wonder how he can go on like this if he doesn't want to eat anything! I'm now on the rampage for toddler friendly recipes but I think he'll have to be a lil' bigger for me to try this one out :-) bookmarking it anyway as I love mushrooms!
