Baked Bell Pepper Cheese Pulao/Rice


ot much of a story this time to relate about this dish except the fact that I love one pot meals. They are easy, convenient, nutritious and well liked, what else could you ask for. One fine evening when thinking about dinner I really wanted to make a one pot meal but with a twist. So I figured how about rice with cheese. And it turned out to be great. So if you love your rice and your cheese, here is a simple yet extremely flavorful one pot meal for you.


Ingredients:

Cooked Rice ........................... 2 cups cooled to room temperature
Red, green bell peppers ............. 1 cup chopped
Spring onion ........................... 2-3 chopped
Green chilli  ........................... 1-2
Cashew, raisin ........................ 2 tbsp
Oil  ..................................... 1 tbsp
Garlic .................................. 2-3 cloves
Cumin .................................. 1/2 tsp
Salt ..................................... to taste
Turmeric powder .................... 1/2 tsp
Asafoetida ............................. 1-2 pinches
Garam masala powder ............... 1/2 tsp
Cinnamon .............................. 1"
Cilantro ................................ 2 tbsp
Shredded cheddar cheese  ......... 1/2 cup  or more as needed
Lemon juice .......................... 1 tsp
Method:
1. In a non stick pan, heat oil on medium heat. Add in the asafoetida, cumin and cinnamon, let it pop.
2. Add in the green chilli, garlic and onion, and cook for 2-3 minutes.
3. Add in the salt, turmeric and bell pepper cook till it gets cooked but still has a bite.
4. Add the rice, mix and add cashew, raisin and cilantro. Add the lemon juice, mix and take off the heat.
5. In a 8 x 11 " non stick pan, spread half of the rice, and sprinkle some cheese on the top. Repeat for the second layer. Bake for 12-16 minutes in a 375ºF preheated oven. Cool down slightly.  Serve with some raita if you wish. Enjoy!!
