There are quite a few recipes I have posted recently that are linked to my childhood memories. Guess when I think about food, a part of me still is a child that wants to have fun. This recipe is for another one of those fun childhood memories from the time I was a lil' girl. These simple rolls used to fascinate me over all the complex and beautifully made up cakes and pastries around. The soft spongy rolls filled with fruity jam was always my favorite. This was always the cake for me whenever we used to go to any pastry shop any day. I also like the fact that this is very light and can be used as a light dessert.
Always thought it will be very tricky to make, but thanks to chef Sanjeev Kapoor and his cookbook I was able to make these absolutely wonderful rolls at home. They were light, delicious, moist... exactly the way I remember them. And yes, rolling them can be a little tricky with the jam oozing out and making a mess (you can tell I speak from experience)... well how did I do it then, got hubby to work! easy :)
Ingredients:
All purpose flour ....................... 3/4 cup
Baking powder ......................... 1/2 tsp
Eggs ...................................... 4 separated
Powdered sugar ........................ 3/4 cup
Vanilla extract .......................... 1 tsp
Salt ....................................... 1/4 tsp
Castor sugar ............................. for dusting
Strawberry jam ......................... 5 - 6 tbsp
Method:
1. Preheat oven to 375 deg F. Line a fifteen inch by ten inch baking tray with parchment paper.
2. Sift the flour and baking powder together. Beat the egg yolks until light, continue beating the mixture, adding sugar gradually, till creamy.
3. Stir in the vanilla extract. Add in the flour mixture into the egg mixture. Beat the batter until smooth.
4. Whip the egg whites with salt until you can form a peak, but not dry. Fold it gently in the cake batter.
5. Spread the batter in the prepared tray and bake for 12 - 14 minutes. While still hot, turn the cake out onto a parchment paper sprinkled with caster sugar. Trim the hard edges. Spread the cake with jam and carefully roll it up. Wrap the roll in the parchment paper. Cut into slices and serve. ENJOY!
Notes:
1. You can use any jam of your choice. Also you can serve it topped with whipped cream if you desire.

Yum yum yum spongy rolls..simply awesome.
Aaha Oho
@-Shobana- Thanks..I don't like my baked stuff to taste eggy either..It sure has taste of eggs but I don't think it is too eggy.
@ Harini- Hmm..I think eggs give the sponge its elasticity so I have a feeling that without eggs it will be extremely difficult to roll..there however might be an eggless recipe , that I am not aware of..do let me know if you find one.
How beautiful! So even and beautifully formed, soft and spongy looking too. And delicious I'm sure.
There's something special about the foods we ate as a child, isn't there?

Hi Aipi! So lovely to see you on the hearth and soul hop! Oh, I remember this simple cake from my childhood too. Back then, i didn't really like fancy frosting, so this is always what I would go for. Your version looks very simple and delicious. I would like it with the whipped cream and use some lemon curd in the middle! Hugs! Alex@amoderatelife
Goodness, Swiss Rolls were such a taste of my childhood too. In fact, I don't think I've ever had it for probably 30 plus years - maybe it's time to try this and rekindle some childhood memories.
Sue :-)
Aipi, I am sure your husband loved helping make this delicious swiss roll - I want to give this a try at Christmas - I think it would be perfect to have around to share. Thanks for sharing this with the Hearth and Soul Hop!
I have a sour cherry jam that would go really well with this! Thanks!
Your swiss roll is sooo pretty and perfect! Can you use granulated sugar instead of powdered sugar? I use a recipe that has the same ingredients but with 1 cup of all purpose flour and 1 cup of sugar. Do you think I can substitute 1 cup flour and 1 cup sugar for your recipe? Will the texture be different? Thanks :).
@Anon ~ Thanks for your comment. I will recommend using powdered sugar. If it is not readily available you can always make it at home. Just take the same amount of sugar as indicated in the recipe throw in a tbsp of cornstarch and blend till you get a smooth powder. Hope that helps.
Excellent recipe! I made this swiss roll with apricot filling and it came out very well! Only difficult part was rolling the swiss roll, I thought it would break but it didn't. thanks for a great recipe
