ince the past few days I was craving those spicy veg stuffed buns which we used to always eat from our local fav bakeries back home. These are basically soft buns stuffed with a spicy veg filling. Also the fact that Mr. Yeast and I are now on good terms... in fact we are now friends :) gave me some added courage to try it for myself. Let me tell you, if you are yeast skeptic as I was before, once you start getting comfortable with yeast you will want to use in everything... they are addictive. After making the pav buns a few weeks ago I thought to give this a try and boy I was glad I did as these turned out fantabulous... and so perfect we loved it. They were tasty to the last bite and very very addictive. Smelled heavenly while baking and were gone in no time once they came out of the oven. A super hit!!!! The best part my hubby said these are the best buns he has ever eaten and they tasted better than the store bought ones ;D
I tried to make them little healthier by using whole wheat flour... so that I can continuously convince myself while gobbling them up that these are healthy and so ok to eat and not feel guilty afterwards... he he which I did!!
Ingredients:
For the buns- makes 14 -15
Whole wheat flour or atta ........................... 2 1/2cups
Maida or All purpose flour............................. 1/2 cup
Milk ...................................................... 3/4 + 1/2 (1 1/4 cup) warm
Oil ....................................................... 3 tbsp
Rapid rise yeast ........................................ 1 tbsp
Sugar .................................................... 1 1/2 tbsp
Salt ...................................................... 1 tsp
1/4 cup milk for brushing
For the Filling-
Cauliflower ................................. 1 cup chopped fine
Carrot ....................................... 2 small grated
Potato ....................................... 4 medium about 1 1/4 cup boiled and mashed
Peas ......................................... 1/2 cup
Corn ......................................... 1/4 cup (optional)
Ginger ....................................... 1" finely chopped
Bell pepper ................................. 1/2 small
Oil ........................................... 1 1/2 tbsp
Turmeric .................................... 1/4 tsp
Cumin/fennel seeds ..................................... 1/2 tsp
Coriander powder ......................... 2 tsp
Red chilli .................................... 1 tsp
Cumin powder .............................. 1/2 tsp
Chat masala ................................ 1 tsp
Garam masala .............................. 1/2 tsp
Cashew ...................................... 1 tbsp chopped
Cilantro ..................................... 1 tbsp chopped
Method:
1. In a medium Bowl mix the yeast, sugar and milk and set aside in a warm place till it becomes frothy about 10 minutes. Add in the salt and oil. Mix.
2. In a large bowl add both the flours mix. Make a well at the center and add the yeast mixture little by little.
3. Combine everything using your hand and start kneading. If the mixture appears to be dry add some room temperature water.Knead for 5-6 minutes until the dough becomes smooth. While kneading apply some oil on your palm, it helps in kneading and the dough doesn't stick to your hand.
4. Apply oil on top of the dough and cover with a wet kitchen towel and place it in a warm place. Let the dough rise to double its size, about 1 hour.
5. Meanwhile make the filling. Heat oil in a pan and add the hing and cumin,fennel, let it splutter. Add in the ginger and cashews and stir for a minute.
6. Add in the cauliflower and carrots and cook for 3-4 minutes. Add the peas, corn and bell peppers. Add coriander, salt and turmeric powder. Cook for 2-3 minutes.
7. Add the remaining masalas and potato and mix well. Cook for 3-4 minutes. Add in the cilantro. Turn off the heat and let the mixture cool to room temperature.
8. Gently deflate the dough and knead for a minute.
9. Divide the dough into 15-16 equal parts and roll into balls.
10. In a lightly clean floured surface take one portion of the dough and roll in a 4-5 inch disc. Place about 1 tbsp of stuffing in the center and bring the edges to seal. Repeat with all the dough.
11. Brush the tops with milk and sprinkle the sesame seeds evenly on top of each bun. Cover and let rise for 45 -50 minutes.
12. Preheat oven to 400 deg F. Bake for 12-17 minutes,keep an eye as every oven is different. Serve warm brushed with some butter if you like. ENJOY!!
Notes :
1. Different kinds of vegetables can be used in the filling as beans, spinach etc.

Nicely done dear. I have try out these buns. I made buns (not these, just buns) once and they did not come out very well and then never tried from there on. I may take up these and try them. But, I already have so many of your recipes bookmarked that I don't know where to start from :)

@Deepa ~ Thanks for the comment and your question. I personally prefer the flavor panch phoran brings but you can always substitute with a equal amount of a mixture of cumin and mustard seeds. Hope that helps. Happy cooking :)

@ Priya~ Browning will depend on three things. Firstly, try increasing the baking time as every oven is different but keep a watch. Make sure to use the correct ratio of whole wheat flour and lastly a glaze of egg wash or milk should definitely help with the color. Hope that helps.
