Paneer tikka kathi rolls

 

I love the idea of wraps n rolls... fun easy and a welcome change from the usual. These rolls make a complete meal by themselves. Great for picnics, casual lunch parties, these are always the first ones to go. They are also great for a nice cozy weekend brunch. All the goodness of paneer tikka, spicy marinated roasted paneer with tomatoes, onions bell peppers rolled inside a soft toasty chapati roll. B L I S S.
Here's how I make it-

For the Paneer Tikka:
Ingredients: serves 4
Paneer .............................. homemade or store bought  2 cups cut into 1 1/2 inches cubes
Green bell pepper ................. 1 medium (cut the same size as the paneer)
Tomatoes ........................... 1 large (seeds removed and cut the same size as the paneer)
Onion ............................... 1 small (cut the same size as the paneer)
Marinade:
Yogurt .............................. 1/2 cup well beaten
Lemon juice ....................... 1 tblsp
Red chilli powder ................. 1 tsp or to taste
Ginger garlic paste ................ 2 tsp
Salt .................................. to taste
Tandoori masala ...................1 tsp
Chat masala ........................ 1/2 tsp
Coriander powder ................. 1 tsp
Cumin powder ...................... 1 tsp
Garam masala ...................... 1/4 tsp
Kasoori methi ...................... 2 tsp crushed
Oil ................................... 1 1/2tblsp


Method:
1. Take a medium size bowl and combine all the ingredients for the marinade except oil. Add paneer, bell pepper, tomato and onion. Gently and evenly coat the paneer with the marinade. Cover it with a plate or plastic wrap and marinate for 1 - 2 hours in the refrigerator.
2. Heat oil in a wide non stick pan on medium to medium high heat and saute the marinated paneer till light golden brown and roasted. Stirring in between. Set aside.
For the rolls:
All purpose flour ......... 1 cup
Atta ....................... 1 cup
Salt ........................ to taste
Milk ........................ enough to make make a soft smooth dough
Little oil for cooking
Atta for rolling

1. Combine all the ingredients and knead into a soft dough.
2. Divide the dough into 12-14 equal portions.
3. Roll out each portion into a thin chapati.
4. Cook each chapati on a tava (griddle) applying few drops of oil on both sides. Keep aside.
To assemble:
1. Divide the paneer tikka filling into equal portions.
2. Spread one portion of the filling in the centre of each chapati and roll up tightly serve with some raw onions and mint chutney on side.
Notes:
1. To save time try using wheat tortillas for the rolls and is a great time and energy saver and taste great too.
