Easy cheesy stuffed peppers



Hubby makes a killer eggplant bharta. Why the mention of eggplant bharta in the stuffed pepper recipe, you ask? It is because this one time he decided to use these anaheim peppers in his bharta and that is when I got the idea that these peppers will be absolutely fabulous when stuffed. I will definitely post his eggplant bharta sometime soon but for now here is the recipe for the stuffed peppers. They are anaheim peppers (you could use practically any 'stuffable' ones) stuffed with a spicy potato cheese filling and baked to a perfect crust. They are perfect as appetizers or as a side to a nice homey rice daal meal (or anything else you like).

Ingredients:
Anaheim peppers ...................................... 4
Potato ..................................................... 2 boiled and mashed
Corn ........................................................ 1/4 cup (optional)
Cilantro .................................................... 1 tsp chopped
Garam masala ........................................... 1/4 tsp
Cheese ..................................................... half cup (mozzarella or cheddar)
Bread crumbs ............................................ 2 tsp
Coriander powder ....................................... 1 tsp
Chaat masala ............................................. 1/2 tsp
Fennel seeds .............................................. 1/4 tsp
Red chilli .................................................... 1/4 tsp
Turmeric ..................................................... a pinch
Salt ............................................................ to taste


Method:

1. Preheat over to 400 deg F.
2. Slit the peppers lengthwise on one side and remove the seeds. Be careful not to rip the peppers. Brush lightly with oil. Microwave on high two minutes. Set side. This step softens the peppers and speed up the cooking process.
3. In a medium size bowl, take the all the ingredients except the peppers and breadcrumbs and mix together to combine.
4. Stuff the peppers evenly with the potato stuffing. Sprinkle breadcrumbs evenly. Spray with cooking spray and bake for 18 - 20 minutes or until golden crust forms on top.
5. Take out, allow it to cool down slightly and serve. ENJOY!!

Love it Aipi. I have a similar recipe, but I used just the cheese mixes with yogurt. This time, I will try this. This is such a great snack :)

What I like abt these is, they have just the right amount of kick! yum!
Earlier I could handle a lot of heat, but now I have toned it down several notches and like milder peppers like these.
