Oven roasted rosemary garlic potatoes


This is the healthy (tastier) way to eat and enjoy your potato fries. Spicy, garlicky potato wedges with lots of rosemary flavor and some Indian spices, baked in an oven yum ,try this once and believe me you will never go back to your regular fries again. These are incredibly easy and simple to make and are so full of flavor.
Crisp and thick, with softer insides. The skin lent a very earthy flavor and the best part about it is, It goes easy on your waist-line too.
They are very versatile as well as different types of seasoning can be used as per your liking. I serve it often as an appetizer or side dish when I have people over. These will be finished before you know and everybody will be asking for more. These are a big hit among kids too.

Ingredients: serves 2- 4
Potatoes ............................... medium size 5 - 6 (I used the regular red ones) 1 lb
Fresh rosemary ........................1 tbsp chopped (can be substituted with 1 tsp dry one)
Garlic .................................. 4-5 cloves chopped
Red chilli powder .................... 1/2 tsp (or to taste)
Garlic powder ........................ 1/2 tsp
Black pepper powder ................ 1/4 tsp

Corn starch............................. 1 tbsp
Chaat masala......................... 1/2 tsp (optional)
Olive oil ............... 3 tbsp
Salt .................................... to taste
Method:
1. Preheat oven to 450 deg F. Line a cookie tray with aluminum foil and spray with some cooking spray. Cut the potatoes into 1/2 inch wedges and place them in a bowl of water.
2. In a bowl place everything except the potatoes and mix it well.
3. Drain the potatoes. Add them in and mix well so they get evenly coated. Spread them on the tray in a single layer.
4 . Bake for 12-16 minutes on one side. Take out and flip each wedge with the help of a fork and bake again for 12-15 minutes till they get nicely colored and crispy. Make sure to keep an eye as every oven is different.
5. Serve immediately with ketchup. ENJOY!
Notes:
1. You can use one tsp dried rosemary if fresh ones are not available.
