Artichoke Hummus

If you like hummus and if you like artichokes you gotta try this.. the creamy dip with a hint of mild tartness and taste of artichokes, some Indian spices, lots of garlic and olive oil.. yummy... my kinda stuff!! Perfect for dipping also can be used as bread spread. Heres how I make it.
Ingredients:
Garbanzo Beans ................................. 1, 15 oz can, drained and rinsed
Artichoke hearts (canned) ..................... 1/2 cup drained roughly chopped
Mint leaves ...................................... few
Garlic ............................................. 4 cloves, chopped
Tahini (Sesame Paste) .......................... 3 tbsp
Red chilli powder ............................... 1/2 tsp
Cumin powder ................................... 1/4 tsp
Salt ................................................ to taste
Lemon Juice ..................................... 2 tbsp
Water ............................................ 1/4 cup
Extra virgin Olive Oil ........................... 4 tbsp
Method:
1. Add garbanzo beans, artichoke, garlic, mint, tahini and salt to a food processor or blender.
2. Once roughly ground, add water, lemon juice, red chilli, cumin and olive oil.
3. Blend into a smooth paste, pushing down the sides in the food processor.
4. To serve, spread on a platter and drizzle olive oil red chilli powder, sprinkle chopped parsley and serve along with some pita chips. ENJOY!
Notes:
1. If you don't have access to tahini use 2 tblsp of sesame seeds instead.
2. I like my hummus garlicky and tart ;-) please adjust to your taste.

wow it looks wonderful ...my hubby is big fan of hummus but artichoke is very new veggie for me so no idea how its taste but i am sure ur's hummus is yummy ...aipi i love to try artichoke hummus soon :)
