
An all time favorite in the chaat category is the one and only aloo tikki chat...its something that can have you salivating just by thinking about it. Very popular among all age groups, the epitome of indian street food. These are flavorful patties or tikkies made out of mashed potatoes and other spices, which are shallow fried then smothered with a spicy yellow peas sauce and garnished with sweet and spicy chutney, yogurt, sev, onion and fresh cilantro..YUMM!! It is always reminiscent of the carefree school and college days :) My friends and I used to queue up in front of 'chaat wale bhaiyyaji' ka 'thela' and relish it every single day... pure bliss!
These are fairly easy to make, once you have all the ingredients and are soul satisfying.This I learned from my mom..
For the matar
Ingredients:
Dry yellow peas .................................. 1 1/2 cup
Hing ................................................ a pinch
Coriander powder ............................... 2 tsp
Red chilli powder ................................ 1 tsp or to taste
Ginger ............................................. 2"piece grated
Green chilli ....................................... 4-5 chopped or to taste
Roasted cumin powder .......................... 1 tsp
Black salt .......................................... 1/2 tsp
Turmeric ........................................... 1 tsp
Salt ................................................. to taste
Oil .................................................. 1 tblsp
Tamarind concentrate ........................... 1 tblsp or to taste
Cilantro leaves .................................... 1 tblsp chopped
Method:
1. Wash and soak the peas overnight in water.
2. Drain, rinse and add peas plus fresh water (4 cups), salt and pinch of turmeric in a pressure cooker.
3. Allow pressure cooker to whistle once, reduce the heat to a simmer and cook for 10 minutes.
4. Allow the pressure to release by itself.
5. Heat oil in a pan. Add hing, ginger and green chilli and stir till they turn light brown.
6. Add in the cooked peas and mix.
7. Add red chilli, coriander powder and cook for 4-5 minutes. Add water to desired consistency and add cumin powder salt, black salt, tamarind and cilantro. Mix everything and bring to a boil. Turn off the heat.

For the tikkies:
Ingredient:
Potato .................................... 2 lbs boiled and mashed
Green chilli .............................. 2-3 finely chopped
Salt ....................................... to taste
Cilantro .................................. chopped 1 tblsp
Corn starch .............................. 3-4 tblsp
Oil ......................................... for shallow frying
Method:
1. In a big bowl take potato salt cilantro and green chilli. Mix. Add in the corn starch and mix well.
2. Take a small portion and make a flat round patty. Repeat the process for the entire mix.
3. Shallow fry them on a non stick pan till golden brown on each side.
To serve: (tamarind, mint chutney, yogurt, sev, black salt, cumin powder, onions etc)
1. Place 2 patties on a plate, pour the peas over them, garnish with the above ingredients of your choice.
2. Serve immediately. ENJOY!

wow my all time favorite chaat...looks sooooo tempting ...in chennai there is mall called Spencer Plaza,there one small chat center is there call bengali chat ,all items in that stall is mind blowing my hubby n myself go there often to have panipuri n chat ....aipi i tell u what a taste ..by seeing urs i remembering all..urs looks lovely
